Effective April 01, 2024
As of version 2024-04 of the Admin GraphQL API, you can use the productOptionsCreate, productCreate, and productOptionUpdate mutations to create metafield-linked product options.
Metafield-linked product options are only available in Shopify taxonomy early access.
